Watermelon Radish, Cara Cara Orange, Goat Cheese, and Chive Salad with Honey Orange Vinaigrette

This is an effortless salad that is sure to impress.
A salad of juxtapositions in texture and flavor. The slight bitterness of the watermelon radish is complimented by the sweet and juicy cara cara orange segments. The smooth and creamy goat cheese is contrasted by the crisp and crunchy texture of the radishes and walnuts. The honey orange vinaigrette brings out the flavor of the cara cara oranges lending a brightness to the dish.

INGREDIENTS
For salad:
Watermelon radish sliced thinly into rounds (2 large)
Cara Cara oranges cut into small segments (2)
Walnuts (1/3 cup)
Chives minced (2 tsp)
Goat cheese (to taste)
For dressing:
Cara Cara orange juice (1/4 cup)
Orange zest, grated (1/2 tsp)
Extra virgin olive oil (1/4 cup)
Red wine vinegar (2 tsp)
Shallots, minced (2 tsp)
Dried oregano (1 tsp)
Honey (1 tbs)
Kosher salt (1/4 tsp or to taste)
Black pepper (1/8 tsp or to taste)
At 350F, spread walnuts out on a baking sheet and toast for 10 - 12 minutes.
Layer watermelon radishes on a plate, then orange segments, goat cheese, and walnuts.
Garnish with chives.
Transfer dressing ingredients into a mason jar. Shake well until combined.
Spoon dressing over the salad.
